
Posting these recipes from our New Year’s eve and New Year’s Day parties are becoming quite symbolic. It’s like eating up leftovers from the fridge and cleaning up the cupboard, getting ready to re-stock and take on the challenge of eating healthier this year.
ERR– or maybe this month. After all, we are 13 days in and there’s no stopping January from happening.
Even if I didn’t make a list of New year’s resolution, I thought it’s understood that I like to shake off what the holidays left me. I’ve been eating greens and veggie soups…. kind of, balancing out all these delicious things I made for the holiday that just passed by.
I’ve been giving myself cheat days too! Cheat days are good for the soul and is also good for the mind. It keeps me from feeling deprived and it makes me look forward to Sundays all the more.
Cheat Days. Sundays. Dessert. I love word association.

My ideal dessert after a wonderful meal every Sunday should include any two of: the moistest cupcakes, a slice of chocolate cake drizzled with caramel sauce, chocolate chip cookies, ice cream, chocolate covered nuts, frozen yogurt or leche flan.
One of these cupcakes would satisfy my craving for something sweet….it has chocolates and candies, after all. And I could put extra if I want to.
These Ice Cream Sundae Cupcakes are the easy version of some of the recipes you can find online. It’s a great party recipe because children are always drawn to chocolate cupcakes.

- Your favorite chocolate cupcake recipe
- candy sprinkles
- m&m’s
- white chocolate chips
- purple gel food color
- Look for cute cupcake cups and crumble your chocolate cupcakes into the cups until about¾ full.
- Melt some white chocolate chips and mix in purple gel food color.
- Pour a tablespoon on top of each crumbled cupcake cup.
- Sprinkle with candy sprinkles and put an m&m in the middle like a cherry on top of a sundae.
