Bruschetta is grilled bread rubbed with garlic and topped with extra-virgin olive oil, salt and pepper and is usually served as snack or appetizer.There are variations in topping,sometimes it is also topped with roasted peppers, tomatoes, or cheese.
2 Baguette, sliced diagonally( ½-inch thick)
4 cloves garlic
5 medium tomatoes,seeded and diced
5 tbsp extra-virgin olive oil
2 tbsp chopped fresh Basil leaves or
1 tbsp dried basil
6 anchovy fillets
salt and pepper to taste
- Combine tomatoes, olive oil, basil, salt and pepper.Let it sit in a cool place for 30 minutes to infuse.
- Grill sliced baguette until lightly golden and crispy.
- Rub each with garlic to infuse it with flavor.
- Top each with our tomato mixture and small pieces of the anchovy fillet.
- Serve with soup.
