South Beach Diet Pizza – Veggie Toppings

Have you seen The Last Air Bender?? We did yesterday. Oh, I love Aang- his acting skills and the facial expressions. And I love the special effects. Air bending techniques, water bending skills, earth bending  and fire bending… It’s also nice how they turned Appa, the flying bison, into life. He’s like one of those big rvs you use for camping. You can take them anywhere and you’ll be comfortable because you have all the convenience of your own home. One of my dreams is to own an rv so I can travel anywhere I want without the need to stay at a hotel.

Anyway,wanna see my food bending skills?? I was able to eat pizza while on SBD, hee.

I know what you’re thinking…How did I do that? Am I cheating? {Well, aside from the once a week cheat day that I assigned myself so I won’t feel deprived} No, I’m not.

I used grilled chicken breast as pizza crust. Trust me, this is pure heaven. I know the photo doesn’t look as nice but I’m gonna have a nicer photo for you. I’m going to make this pizza with a different topping in the next few days.


4 pieces Skinless chicken breasts
1 cup low fat mozzarella cheese, grated
½ parmesan cheese
½ green bell pepper sliced thinly
½ onion, sliced thinly
4 pieces black olives, sliced thinly
pizza sauce {tomato sauce, artificial sweetener, dried basil}


  • Butterfly chicken breast at its thickest part in order to make it all the same thickness.
  • Grill in the oven until it’s cooked
  • Place chicken in a baking tray
  • Spread pizza sauce on top of each chicken.
  • Sprinkle with parmesan cheese
  • Add bell pepper slices, onion slices, olive slices on top and Sprinkle with low fat mozzarella cheese.
  • Bake in the oven until bubbly.
  • Enjoy.
