Sage-Roasted Pork Belly

Sage-Roasted Pork Belly

Sage-Roasted Pork BellyI am cooking in a real kitchen with real food that I eat for lunch everyday…

Sometimes my food looks horrible….

..and sometimes, it looks a lot more horrible than horrible.

Does this roasted pork belly look horrible to you?

I think it does, too…

But when I think about the aroma of garlic and sage….

the crispy skin….

and the brown butter sauce….

..then, it’s not so horrible anymore…

pork belly fat is comforting…hee.

I am now having a loveaffair with Sage….

Don’t get jealous peanutbutter, it’ll end as soon as I’m done cooking the rest of it the in the fridge….

Sage Roasted Pork Belly

{recipe adapted from Seasons by Donna Hay cookbook}

Ingredients:

7 cloves garlic, chopped
500-750 kg pork belly,whole
3 tbsp olive oil
1 tbsp salt
a bunch of sage

Directions:

  • Preheat oven to 160°C .
  • Arrange the garlic over the base of a baking pan.
  • Rub the olive oil all over the pork belly and rub the salt into the skin. Place skin-side down on top of the garlic and cook for 2 hours.
  • Increase the heat to 180°C . Turn over the pork.
  •  Add the sage and cook for a further 30 minutes or until the skin is golden and crunchy.

I made a brown butter and sage sauce too. You know how I love sauce in everything!

Ingredients:

3 tbsp butter
8 sage leaves
pinch of salt

  • Just place the butter, salt and sage in a saucepan over low heat and allow the butter to simmer until a golden brown colour. It’s a great dipping sauce for this roasted pork belly.
