4th Week of my C-Lium Lose More, Live More Weight Loss Challenge

Thanks to C-Lium Fibre, I got to experience a Cross Fit session together with other bloggers and Biggest Loser Pinoy Edition Season 1 finalists, Art Mendoza and Angela Lupangco, at CrossFit Manila in Taguig.

I have never done a Crossfit Session in my life!

CrossFit is a core strength and conditioning program. It includes a variety of exercises done repeatedly for a short period of time. It was very intense.

Our session featured exercises which you can find at the Clium Lose More Live More website. We did 7 repetitions of  Wall Balls, Push Ups, Box Jumps and Burpees. I wasn’t able to do it for the whole 10 minutes {the time that was alloted}. I stopped a little over five minutes because I was already out of breath and the right side of my tummy already hurts. These exercises were such a challenge!

After the work-out we headed over to Kuya’s at The Fort for lunch. There we met Ms.Nadine Tengco, the resident nutritionist and chef at The Biggest Loser Pinoy Edition.

She discussed how dieting really makes us fat. She said that in order to lose weight, what we need to do is make a lifestyle change. We should keep in mind these essential rules in weight loss:

  1. Frequency – Eat every 3 to 4 hours to maintain blood sugar constant. .
  2. Quality– The food that you eat should be:
    • Nutrient dense – It should have more nutrients and less calories.
    • Volume metric – It should have more amounts of water and fiber to help you avoid hunger pangs.
    • Whole foods – It should be unprocessed. Fresh, raw, or home-cooked should be your priority so forget about fastfoods, processed meat, and canned goods.
    • Foods that slow down digestion – Keeping the blood sugar constant means slowing down the digestion of carbohydrates. Carbohydrates are digested an hour after a meal, protein in 2 hours, and fat in 5-6 hours. Fiber slows down digestion so it is essential to have fiber in every meal.
  3. Quantity – You can have three 350 calorie meals and 100-200 calorie snacks a day.
She also told us about the Fat Fighting Four which should always be included in our daily diet: Vitamin D, Calcium, Omega 3 and Fiber.
CLium Fibre is a great source of fiber which you can conveniently add to your diet. You just have to mix it with with water, juice or coffee and drink it anytime, anywhere. But drinking is not the only way you can take it. As an alternative, you can also sprinkle it over salad or use it as a thickener instead of flour. Use it to thicken soups, gravy and sauces.

This is one of the recipes that Ms. Nadine shared with us.

Cheesy Tex-Mex Nachos
(Serves 8)

Nachos:
4 packs Soyami Soy chips Original

Tex-Mex Meat Topping:
125 g ground lean beef
125 g ground chicken breast
1 tsp cider vinegar
1 tsp low sodium soy sauce
2 tsp FUEGO SPICE MIX (see recipe below)
½ tsp sea salt
ÂĽ cup chopped onions
ÂĽ cup chopped bell peppers
1 tbsp canola oil

Fuego Spice Mix:
2 tsp ground paprika
1 tsp chili powder
½ tsp ground cumin
ÂĽ tsp cayenne pepper
1/16 tsp ground cloves
ÂĽ tsp garlic powder
1 tsp psyllium fiber

Combine all ingredients in a small bowl. Set aside

Procedure:
1. Combine meat, spice mix, cider vinegar and soy sauce. Knead and mix well.
2. In a medium non-stick pan, heat 2 tsp of the canola oil and sauté meat, breaking into small pieces with fork as it browns
3. Using a slotted spoon, transfer meat to a bowl. Discard fat. Set aside
4. With remaining 1 tsp oil, sauté onions and bell pepper until soft. Stir in the cooked ground beef. Turn off heat. Set aside

Salsa Con Queso:
ÂĽ cup grated quick melt cheese
1 small tetra pack (250ml) low-fat milk
½ tbsp C-Lium Fibre
1/8 tsp ground turmeric
Salt & pepper
Water

Procedure:
1. Mix C-Lium Fibre with ÂĽ cup milk and water, stir well and set aside
2. In a saucepan, simmer remaining 1 cup milk and add quick melt cheese. Stir constantly until cheese completely melts
3. Add turmeric powder and stir.
4. Pour the dissolved fiber into cheese mixture and stir constantly until sauce thickens slightly.
2. Turn off heat and set aside. Sauce will thicken as it cools down. (if sauce gets too thick, add about 2 tbsp hot water)

Tex-Mex Salsa:
1 ½ cups fresh tomatoes, de-seeded, chopped
2 tbsp cilantro chopped
1 tbsp lime juice
1 ½ tbsp olive oil
ÂĽ tsp salt
½ tsp cumin
ÂĽ cup chopped onion

Combine all ingredients together. Let stand so that flavours mix well

Assemble Tex-Mex Nachos

1. Layer Soyami chips on plate and top with Salsa con Queso
2. Add Tex-Mex meat and top with Tex-Mex salsa
