Watermelon Mango Salsa

Tomorrow is Monday. It’s back to the normal grind, people!

I can’t believe three weeks of Holiday is over. Students will be back to school and parents will go back to work.

sob*…

That’s for most people anyway. We still have two days of extra vacation because Ykaie won’t be back to school until wednesday. That means I can still wake up at around 7am in the morning. Weee!

I just woke up today from my afternoon siesta and it’s kind of a lazy sunday for all of us here at home. peanutbutter‘s asleep and Ykaie is watching her cartoons.

I won’t keep you here too long. I know you have some lounging around to do as well! (wink*)

Watermelon Mango Salsa

This Watermelon and Mango Salsa is another one of our side dishes last NYE. It’s very refreshing because of the watermelon and the mango provided a little bit of tartness and sweetness at the same time. It was actually intended for the grilled pork chops but someone dipped chips into it as well.

Watermelon Mango Salsa

Ingredients

Scale
  • 2 cups diced watermelon
  • 1 cup diced mango
  • 1 white (or red) onion, chopped
  • 2 tomato, chopped
  • 2 tbsp fresh cilantro leaves chopped
  • the juice of 1 lime
  • 1/2 tsp salt

Instructions

  1. In a large bowl, combine watermelon, mango, onion, cilantro, lime juice and salt to taste.
  2. Chill before serving.

    1. I was just wondering if this salsa would work without the cilantro. My little brother hates cilantro but I still want to try this salsa.
