Chicken Menudo

With all the unhealthy eating habits we were seem to be back to the last couple of months (because it was unavoidable). It’s high time we go back to healthy eating. I proposed we avoid eating red meat again or lessen it as much as possible. Well, I mostly proposed that to myself because if I tell that to the fam, then I would hear some objections, complaints, and whining noises. Well, since I am the designated cook, I decided to make mostly chicken and fish dishes starting today. I figured that if it’s delicious and it’s on the table, and they’re already hungry, they would eat it anyway. It wouldn’t matter if it’s not made of pork or beef.

And so I made Chicken Menudo — for the first time ever!

But before this Chicken Menudo was Sunday’s Mega lunch at Soban K-Town.

Sis, Rome, and peanutbutter wanted some Samgyupsal… so when they saw Soban last Sunday, their minds were set. They were also sold to this Group set meal that’s worth ₱2,000. We were told it was a meal set that’s good for 3-4 persons but when it was served, I though it was good for 6-7! There were a lot of food included in the set meal that we were so full after.

Ykaie and peanutbutter also tried Arrowland by Gandiva. Ykaie wanted to try it for the longest time but we always can’t find the time to do so. We had all the time in the world yesterday — and these two enjoyed being an archer. Looks like we are going back for rounds of arrows.

Pork Menudo is a really popular Filipino dish. It’s one of those dishes that’s most awaited on the table whenever there’s a special occasion. My mother makes a really mean menudo back when she didn’t have Alzheimer’s Disease. It’s was unforgettable. But because we are trying to eat healthy, I am letting go of our usual pork version and used chicken breast this time.

To tell you honestly, using chicken breast didn’t make any difference except that it doesn’t have fat. It didn’t change the flavor and the taste though. This dish still came out flavorful.Still so good with rice or pandesal.

This is absolutely the answer to your menudo cravings when you’re trying to avoid red meat…

Chicken Menudo

Ingredients

Scale
  • ½ cup canola oil {or any other cooking oil}
  • 2 large potato, diced
  • 1 carrot,diced
  • 3 pieces hotdog, sliced
  • 200g pork liver,diced
  • 2 white onion, chopped
  • 4 clove garlic, minced
  • 600g chicken breast and/or thigh fillets, cut into cubes
  • 1 200g pack tomato sauce
  • 1 cup water
  • 1 pc knorr chicken cube
  • 1/2 cup raisins
  • 1 large green bell pepper, diced
  • 1 large red bell pepper, diced
  • salt and pepper to taste

Instructions

  1. Fry potato and carrots in hot oil. Remove from oil and set aside.
  2. In the same pan, fry the hotdogs. Remove from oil and set aside.
  3. Fry the pork liver. Remove from oil and set aside.
  4. Remove some of the oil and sauté garlic and onions.
  5. When onion becomes translucent, add chicken breast and thigh and fry until slightly brown in color then add liver. Cook for 2 minutes.
  6. Pour in the tomato sauce and water.Add chicken broth cubes. Stir to dissolve. Mix well.
  7. Bring to a boil and simmer for 15 minutes. Add fried potatoes, hotdog, carrots, and pork liver. Continue to cook over medium heat until meat and potatoes are cooked and sauce has thicken.
  8. Add raisins and bell peppers. Cook for 2 minutes.Turn off heat.
  9. Serve with steamed rice

      Yes, I think it will, a little. But if you don’t like liver then, of course, you can choose not to add liver. I’m sure you’ll like it better.

  1. A different menudo from what I’m use to. Here in New Mexico menudo is made with tripe (beef stomach). I’ve never been a fan, so I’m quite interested in your version of it. It looks like a dish we’d love in this house. Thanks for something different!
