
Lunch Break, Mom Edition
When you work from home, lunch can be a blur between meetings, laundry, and your toddler’s “Mom, I’m hungry!” Every. Thirty. Minutes.
That’s why I started planning simple, healthy lunches that don’t require much brainpower or cleanup — just fresh, satisfying meals that give energy (and sanity) back to moms like us.
1. Grilled Chicken Rice Bowl
Cook extra chicken during dinner and use the leftovers! Add rice, steamed veggies, and drizzle with sesame dressing. Meal prep magic in 10 minutes.
2. Tuna Wraps with Veggies
Mix canned tuna, mayo, lemon juice, and diced cucumbers. Wrap in lettuce or tortilla and you’ve got a protein-packed lunch.
3. Kimchi Fried Rice with Egg
Leftover rice + egg + kimchi = flavor bomb. This is my go-to when I want something quick but comforting.
4. Veggie Pancit Canton
Quick, colorful, and surprisingly filling. Toss in whatever veggies you have — carrots, cabbage, beans.
5. Chicken Caesar Salad Jars
Layer lettuce, dressing, grilled chicken, and croutons in a jar for a grab-and-go healthy option between Zoom calls.
Lunch isn’t just another chore to check off — it’s your pause button. A small reminder that you deserve to eat something good, even on your busiest days. Because when mom is nourished, the whole home runs smoother.
