Come to think of it. I’ve been blogging for how many years now and yet, I haven’t blogged about Pork Menudo.

Oh my gosh. I have taken it for granted. Well, now is the time to put it on spotlight.

Pork Menudo is a dish that you won’t only see on the family table on a day-to-day meal. It is also served during special occasions or when there are guests coming.

What I know about Menudo, I learned from my mother- the color, the taste, the consistency of the sauce and the ingredients. She cooks really good Menudo.

Pork Menudo

Ingredients

Scale
  • 500g pork liempo, cut into cubes {or any other cut that has fat}
  • 2 large potato, diced
  • 1 carrot,diced
  • 250g hotdog, sliced
  • 250g pork liver,diced
  • 1 cup raisins
  • 2 cup tomato sauce
  • 2 white onion, chopped
  • 4 clove garlic, minced
  • ½ cup canola oil {or any other cooking oil}
  • ½ cup soy sauce
  • 5 tbsp calamansi juice
  • 2 pcs bay leaf
  • salt and pepper to taste

Instructions

  1. Marinate pork in soy sauce-calamansi mixture for 1-2 hours.
  2. Fry potatoes,liver and hotdog in heated oil until the edges are a little brown and set aside.
  3. In a wok, heat around 2 tbsp cooking oil and sauté garlic and onions until onion become translucent.
  4. Add pork and sear until a little brown
  5. Pour in the soy-calamansi marinade and the tomato sauce.
  6. Add bayleaf
  7. Simmer until pork is cooked and the sauce is reduced into a thick gravy
  8. Add potatoes, carrots, pork liver and raisins
  9. Simmer for a few minutes, season with salt and pepper to taste
  10. Serve hot with steamed rice

I love my pork  menudo with a lot of raisins, peanutbutter doesn’t. He usually ends up with all the raisins on one side of his plate. Which is a good thing, I get to eat a lot of raisins.

  1. my family doesn’t like raisins in our dishes, so i do not put them na lang, they like eating raisins from the box but not as a meal ingredient lol
