Lemon-Garlic Chicken

Sometimes the simplest things are the most enjoyable…like…

sitting on the front porch and talking…

lying on the grass and staring at the stars in the sky…

but we don’t have a front porch nor do we have a grass where we can lie down…

So the simple things that I enjoy in life is…

playing and laughing with my daughter before we go to sleep…

video chatting with my husband before he leaves for work on the other side of the globe…

eating balut with my daughter under the stars in that old wooden bench outside our computer shop..

and sharing with you what I ate for lunch today.

That’s the best part of my day, being able to reach across your dining table and share a meal with you….

You know, I don’t just share a meal with a person I just met. To be able to eat together means we’re very close..

And we are…

I really appreciate you taking the time to stop by and visit me everyday….

So this is lunch and sis made a refreshing raspberry lemonade to accompany this simple meal…

Those raspberries are leftovers from ykaie’s school bento that she makes….

Lemon-Garlic Chicken
 
Ingredients
  • 400g chicken thigh fillets
  • 3 tbsp olive oil
  • ½ tsp salt
  • 6 cloves garlic, crushed
  • 2 tbsp flat leaf parsley, chopped
  • 1 lemon, halved
  • zest of the lemon
Directions
  1. Heat olive oil in a non-stick skillet
  2. Fry chicken thigh fillets until it gets a little brown
  3. Add crushed garlic, lemon zest and season with salt
  4. Stir for a few seconds.
  5. Toss in juice of half a lemon and flat leaf parsley..
  6. Serve with lemon wedge

    This has to be one of my new favorites!  The simplicity is nice, and the fresh ingredients create a crisp taste!  Absolutely delicious!
