
Wondering where I put those Apple Coleslaw and TPK’s Barbecue Sauce?
It’s all in that sandwich! Ooh, If only I knew that it would taste this good, I would’ve made it sooner.
…and more often.
But today is different. This sandwich marks the changes that you’ll see in this blog in the following days.
I’ll be focusing more on healthier meals and lighter dishes as I’m recognizing the need to change my eating habits.
I know it’s going to be a challenge because I love eating pork…specially pork belly. I love sweets, I love chicharon, cookies and cake.
I probably won’t give them all up, you know, I’ll just eat less of it..LOL!
I joined a weight loss journey last week. I’m gonna tell you all about it on wednesday.

- 1 pork tenderloin
- 3 tbsp olive oil
- 2 tsp salt
- 1 tsp cracked pepper
- 2 tsp spanish paprika
- my Apple Coleslaw
- TPK’s Barbecue Sauce
- Burger Buns
- Place pork tenderloin in a baking pan.
- Drizzle with olive oil and rub with salt, pepper and spanish paprika.
- Cover pan with foil and roast in the oven at 160º for 3 hours.
- While waiting for it to roast make your apple coleslaw and TPK’s barbecue sauce. {Just click the name in the ingredients for the recipe}
- Pull meat apart with fork, then combine with barbecue sauce.
- To serve, put pulled-pork inside a toasted burger bun and top with apple coleslaw.
- Serve with gherkin pickles and ice cold beer *wink*
