This soup is good as a meal itself or a snack because its very filling. And no canned corn please, fresh is better.

Shrimp and Corn Soup

Ingredients

Scale
  • 1 tbsp oil
  • 1 med onion,chopped
  • 1 clove garlic, minced
  • 3 corns, shredded
  • 300g shrimp, peeled
  • 6c water
  • 1 pc shrimp cube
  • 1 cup chili leaves
  • salt and pepper to taste

Instructions

  1. Heat oil in a pot.Sauté garlic and onion until onion becomes transluscent.
  2. Add shrimp and sauté for a few seconds until shrimp becomes half-cooked.
  3. Add water and shredded corn.Simmer until corn is done.
  4. Add shrimp cubes and stir.
  5. Add chili leaves.Simmer for around 30 seconds.
  6. Serve hot.

  7. I remember when my friend made something like this for me…but with chicken! It was SO good, I drank 7 bowls of it! and then suffered a realllllly bloated stomach after, haha!
