Buko Pandan is a dessert-drink that combines the flavor of  coconut and screwpine leaves. It’s one those drinks that we love to prepare during celebrations at home if we aren’t in the mood for it’s thicker, creamier counterpart : Buco Pandan Salad.

Buko Pandan Drink

Ingredients

Scale
  • 6 pandan leaves, washed and cut into 1-inch pieces
  • 1 bottle of sweetened nata de coco
  • meat and juice of 2 large coconuts, {meat shredded to strips}
  • 3 cups tapioca pearls
  • cans of condensed milk
  • 5 cups water
  • 1 packet of green gelatin
  • Green food color – optional

Instructions

  1. Boil the cut-up pandan leaves in water until the water is infused with pandan flavor. Remove the leaves from the water and throw it out.
  2. Cook the gelatin according to packet directions but use two-thirds of the pandan infused water. Reduce the amount of water needed so you’ll get firmer gelatin.
  3. Cut the gelatin into cubes when it solidifies.
  4. Strain Nata de Coco to remove the sugar syrup.
  5. In a large pitcher, combine shredded coconut meat, coconut juice, tapioca pearls, nata de coco, condensed milk, cubed gelatin, water and what’s left of the pandan-infused water.
  6. Add green food color, if desired, just for presentation.
  7. Mix well. Put in the fridge and chill for 2 hours.

  3. I love buko pandan and you gave me an idea what to make for refreshment tomorrow hehehe. I bought a bottle of pandan concentrate and I can boil some tapioca and jello to go with it.
