Strawberry Cheesecake Smoothie

With peanutbutter starting work last monday, I find myself trying to work my way into the leftovers in the refrigerator during lunch time. I am home alone — well, except for our dog jay-R — but I am without a human companion so I am very uninspired to be cooking for one. I figured I’d be hitting two birds in one stone by eating the leftovers because I’ll be cleaning up the fridge in the process. With my appetite these days, I bet the leftovers will be gone by friday and we’ll have to re-stock on Sunday. LOL!

Since I wasn’t able to bake more scones over the weekend, I put the leftover strawberries in the freezer to keep them from spoiling. Last monday, I was trying to think of what I would have for lunch… and I ended up with this: two glasses of Strawberry Cheesecake Smoothie, two slices of raisin bread, and lots of butter. Oh it was such a satisfying lunch even though I was eating it at the dining table in front of the laptop.

Strawberry Cheesecake Smoothie

I couldn’t believe how rich, creamy, and decadent this drink is. It’s as if I’m drinking a slice of Strawberry Cheesecake through my straw! All it took was frozen strawberries, a bit of cream cheese, low fat milk, and greek yogurt.

I couldn’t get enough and I made some for Ykaie that same afternoon and she loved it! She’s been asking me to buy strawberries so we could make it again.

If you’re looking for something healthy and delicious to serve your loved one on Valentine’s Day, then you should try making this. Just garnish it with heart sprinkles and it’s all dressed up for Valentine’s Day.

Strawberry Cheesecake Smoothie

Ingredients

Scale
  • 2 cups frozen strawberries
  • 1 1/2 cups low fat milk
  • 1 cup greek yogurt
  • 3 tbsp cream cheese
  • sugar to taste (optional)

Instructions

  1. Put everything in a blender and pulse until smooth and creamy.
  2. You may add sweeteners like honey or sugar to suit your taste.
  3. Garnish with strawberry slices.
  4. Enjoy!

  11. Oooh, what a great little treat! Did you know that, if you add some coconut oil to that, it’ll actually help you lose weight too?! I keep putting coconut oil in my morning smoothie and I’ve dropped 7lbs in less than 2 weeks (wasn’t able to lose anything before). Miracle, I’m telling ya….and this is while I’m still up, at nearly 1am, snacking on some noodley soup :S I’m terrible, I know.
