Korean Pork Belly Kimchi Stir Fry

I love Kimchi and ever since Ykaie learned to love it, we are never out of it. We always have it as a side dish during meals and I find myself looking for recipes that has kimchi in them. We love SPAM Budae Jjigae and kimchi fried Rice. Our latest favorite is this Korean Pork Belly Kimchi Stir Fry that’s so easy to make yet so flavorful.

When I first made this dish without looking at any korean recipes, I only used pork belly (samgyupsal cut), kimchi, and sesame oil but it was lacking something. So I searched over a few recipe and found out that Gochujang is added. It gives this dish a spicy kick and it adds a complex savory and slightly sweet flavor that complements the fermented tang of kimchi and the richness of pork belly.

Pair it with Seasoned Nori

Ang when I’m eating this, I make sure to have some seasoned nori sheets on the side. The umami from the nori sheets adds more flavor and makes it truly irresistible. Syempre si Ykaie ayaw ng nori. Twinkle likes it but still can’t eat kimchi. Samgyup lang talaga yung sa kanya.. hihihi

To make this yummy dish, I just fried the pork belly until golden and set it aside. Then I sautéed the garlic and onions until fragrant. The pork belly was added after and seasoned with salt and pepper. Then came the kimchi, gochujang, and sesame oil. I stir-fried it for a couple of minutes and it’s done. Garnished with some chopped spring onions and served with rice and seasoned nori. Super yum!

Korean Pork Belly Kimchi Stir Fry

Ingredients

Scale
  • 500 Pork belly, I used samgyupsal cut, I cut it into 3
  • 3 cloves garlic, minced
  • 1 white onion, sliced
  • 1.5 cup Kimchi
  • 1.5 tbsp gochujang
  • 2 tsp sesame oil
  • salt and pepper
  • chopped green onions for garnish

Instructions

  1. Heat large pan over medium-high heat. Add in pork belly (no need to oil the pan).
  2. Cook the pork belly until both sides are crispy & golden.
  3. Set aside. Drain off excess oil from pan.
  4. Add the garlic and onion and saute until fragrant.
  5. Add back the pork belly. Season with salt and pepper.
  6. Add the kimchi, gochujang, and sesame oil. Stir for 1-2 minutes.
  7. Garnish with chopped green onions before serving.
  8. Serve with rice and seasoned nori sheets.
