South Beach Diet Pizza

Well, we eat lots of pizzas.Period.I found a great way to eat pizza while on the SBD.Thanks to What geeks eat,a food blog.I found the link from Kalyn’s Kitchen.The use of chicken breast as pizza crust was pure genius!

South Beach Pizza

INGREDIENTS of my version of the South Beach Pizza:
skinless chicken breasts
1/2 cup grated low fat mozzarella
1/2 medium white onion, sliced thiny
1/2 Bell Pepper sliced into strips
grated Parmesan cheese
Pizza sauce

Butterfly chicken breast at it’s thickest part in order to make it all the same thickness.Bake it until cooked.Place chicken in a tray.Spread pizza sauce on top.Add parmesan cheese,onions,bell pepper. Bake until cheese and toppings are bubbly and golden brown.

This taste soooo good.I’ll be adding ham and mushroom next time.
