Pork Ribs Adobo

If there’s one thing na hindi mawawala sa weekly menu nating mga mamshies — ito yon — ADOBO!

And I think I’ve found my favorite adobo! It’s this Pork Ribs Adobo — I find it more flavorful and tasty than our usual Adobong Liempo … less fatty too! Aksheli, it’s my first time to cook this today and unlike my usual adobo which has a thick and oily sauce — this turned out to have more sauce that has a thinner consistency. I added more water than usual because the ribs has to be submerged in the sauce while simmering so the meat doesn’t only become tender, it also becomes flavorful. So medyo masabaw sya– perfect for pouring over rice.

This is also the first time I cooked adobo without bay leaf — they say this is traditional pinoy so I’m trying it out. I always cook my adobo with bay leaf and oregano… I like the taste of these two herbs together when it comes to adobo.

So what can I say with this adobo without bay leaf? Masarap pa rin and it does taste like traditional Pinoy style adobo.

Pork Ribs Adobo

More flavorful and tasty than our usual Adobong Liempo … less fatty too!

Ingredients

Scale
  • 1 kg pork ribs, cut into pieces
  • 3 tbsp oil
  • 9 cloves garlic, chopped finely
  • ½ cup soy sauce
  • ½ cup vinegar
  • 1¼ cup water
  • 1 tbsp sugar

Instructions

  1. Heat oil in a pot and add the garlic. Cook until fragrant and almost brown.
  2. Add the pork ribs pieces and cook until brown.
  3. Add soy sauce, water, and vinegar.
  4. Cover and bring to a boil.
  5. Add the sugar and mix well.
  6. Cover and simmer for 30 minutes until the pork ribs are tender.
  7. Serve with steamed rice
