Perfect for quick snack or “girl dinner”, this Nacho Salad is filled with the freshness of veggies and a tangy dressing. An absolute crowd pleaser.

I’ve been seeing a lot of videos of this Nacho Salad on Tiktok lately. So I thought, we already love Taco Salad and it’s almost the same except for the meat. What the heck — I’m giving this a try.

So this is what Ykaie and I had for lunch today. This is the easiest of all recipes — no cooking needed at all. All you need is to grab all the ingredients and combine them. I suggest you make the dressing ahead of time — about 1-2 hours to give the ingredients a chance to marry.

To make the dressing, I combined mayo, milk, garlic, lemon juice, brown sugar, salt, and pepper. You may substitute water if you don’t have milk, use calamansi juice if you don’t have lemon, and alternative sweetener if you don’t like brown sugar.

Just combine this with the lettuce, tomato, onion, cucumber, and corn kernels and you have a healthy dip/topping for your nacho chips. This makes for a great snack or even a quick meal if you want something light.

I think I’ll be doing a lot more of this but I’ll definitely tweak the dressing recipe a little to suit my taste.

Nacho Salad

Ingredients

Scale
  • lettuce, chopped
  • tomato, chopped
  • white onion, chopped
  • canned corn kernels, drained
  • cucumber, chopped
  • Nacho Chips

for the dressing

  • 1/2 cup mayo
  • 1/4 cup milk
  • 1 tbsp minced garlic
  • 2 tbsp lemon juice
  • 1 tbsp brown sugar
  • salt and pepper

Instructions

  1. Make the dressing: Combine mayo, milk, garlic, lemon juice, brown sugar, salt and pepper. Mix well. If dressing is too thick, add more milk. Set aside.
  2. In a large bowl combine the lettuce, tomato, onion, cucumber, and corn kernels. 
  3. Add the dressing and mix well.
  4. Use as “dip” or “topping” for the Nacho Chips.
