
Aside from that KETO BAKED SUSHI I made a couple of weeks ago, I also tried this Mango Kani Baked Sushi. I figured I kinda like California Maki, so why not try and make a baked version of it? Sushi nights at home are usually a bit of a challenge when you have kids, picky eaters, or just limited time. That’s exactly why I started making this baked version—it combines creamy kani, sweet mango, and melted cheese in a way that even my little ones can’t resist.
The first time I tried this recipe, I wanted something special for a Friday night family dinner. My kids were buzzing around, and my husband was starving after a long week. I honestly didn’t expect them to actually touch it—but within minutes, every piece was gone. That’s when I knew: baked sushi is a game-changer for home meals.

Mango Kani Baked Sushi (California Maki Baked Sushi)

Ingredients
- 3/4 cup cooked japanese rice
- 1 tbsp rice vinegar
- furikake
- 1/2 cup crab sticks
- 1/4 cup cream cheese
- 2 tbsp kewpie mayo
- 1/2 cup died mango
- Ebiko for topping
- Nori sheets for serving
Instructions
- Combine the rice and rice vinegar. Mix well.
- Spread it in the first layer of your tray.
- Sprinkle with furikake. Set aside.
- in a small bowl, combine the shredded kani crabsticks, cream cheese, kewpie mayo. Mix well.
- Spread it as a 2nd layer to the baked sushi.
- Top wiht the diced mango and ebiko.
- Bake for 5-10 minutes.
- To serve, spoon on a nori sheet and enjoy!
